Pixie in the Kitchen: Vegan Kidney Bean Burgers with Parsnip Fries.

This is my favourite recipe by far – whenever somebody asks me for a failsafe vegan burger recipe or when one of my omnivore friends is curious about what I eat on a regular basis, this is my go-to recipe. It is also one of the easiest things I have ever made in my kitchen: just put everything in a blender or food processor, from patties and fry them. Easy with a capital E! I have even made these without a blender by simply mashing all the ingredients (AirBnB kitchen approved version). You see – this is the bean burger recipe for every occasion. Feel free to adapt it to your taste and play around with different seasonings, or even try white beans or chickpeas. It doesn’t even need to be bean burgers: I also like to make bean croquettes from this recipe and serve them with glazed oven carrots.

Vegan kidney bean burgers with parsnip fries

WHAT YOU NEED

serves 4
1 red onion
1 garlic clove
1 can of kidney beans
1/2 can of corn
(optional: 3 dried tomatoes)
4 TBSP olive oil
salt
6–8 TBSP breadcrumbs

3 large parsnips
3 TBSP olive oil
2 tsp ground cumin
garlic powder

4 wholewheat burger buns
lettuce for garnish

HOW TO MAKE THEM

1. Preheat the oven to 240°C.

2. Cut the parsnips into 1cm thick fries or wedges. In a bowl, mix them with the olive oil and the seasonings and spread them out evenly on y baking sheet. Bake them for 10 minutes, flip them over with a spatula and bake for an additional 10 minutes or until they are golden.

3. For the burger patties, cut the onion and garlic into small chunks and blend them together with all the ingredients except the breadcrumbs. Remove the homogenous dough from the blender and knead in the breadcrumbs by hand. If you find the dough to be too wet, feel free to add more breadcrumbs – add more oil if it becomes too dry.

4. Shape 4 patties and fry them in oil over medium-high heat for about 5 minutes on each side.

5. Serve the patties on der burger bun together with the parsnip fries. Garnish with salad.
