There was a time – a time long, long ago – when I was really into food blogs and I even wanted to start my own. But my expertise, talent and true passion lies in fashion, not cooking… so on I went and started WHAT PIXIES WEAR instead of some half-hearted food blog. But that doesn’t mean I don’t cook anymore – I still do! And I do it with love.

I especially like quick and easy recipes – working girl recipes I like to call them. Recipes for people who love and enjoy good food, but don’t want to spend half their day in the kitchen. The following is exactly one of those: my quick and easy vegan cinnamon and almond pancakes.

VEGAN CINNAMON AND ALMOND PANCAKES

WHAT YOU NEED

serves one

1/2 cup almond milk
1 TBSP vegetable oil
1 tsp almond extract
1/2 cup (spelt) flour
1/2 TBSP baking powder
1 TBSP sugar (add more to taste)
1/4 tsp cinnamon

additionally
1 sliced banana
agave nectar

HOW TO MAKE THEM

Combine dry ingredients (flours, baking powder, sugar, cinnamon) in a bowl, mix well and add the liquid ingredients (almond milk, vegetable oil, almond extract). Whisk until just combined.

Heat a little oil in a coated pan and reduce the heat to medium. Scoop small portions of dough into the pan and bake for 2-3 minutes – until little bubbles start to form. Flip the pancakes and bake another 3-4 minutes. They are done when they’re golden brown. Keep the finished pancakes warm in the oven while you bake the rest of them.

For mini pancakes: For these cute mini pancakes you see in the pics, just use a tablespoon to get smaller portions of dough and bake three vegan mini pancakes  at once.

To serve, make alternating layers of pancakes and banana slices and top it all off with as much agave as you like. Ta-dah! When I say my recipes are quick and easy, I really mean they are quick and easy. ;)
